Happy Holidays everyone!!
This being the last post for 2017, it’s been a crazy, fun, full of growth, challenging journey and I just want to write it out loud and be thankful for it. I have been in such a great and happy mood mainly for the past four days. So much has happened, promising adventures and projects come 2018 are taking place or rather being aligned. This is what people refer to “Doors are opening”. Not forgetting that Christmas is on Monday, “happy feet dance”. Feeling so much at peace and calm about almost everything. There is so much to be thankful for – to the Almighty as well as to you guys. From the old and new subscribers, you have basically helped me build my brand, both for this blog and my baking business #TastieBakes. I totally love and appreciate each one of you.

What better way to end this year than with a colorful yet tropical, healthy, all plant-based, vegan sweet and spicy salad?
Making “Tropical Mango Salad”
Prep time: 5 mins Assemble time: 5 mins Total time: 10 mins
Serves for: 2 pax
- 1 apple -diced
- 2 ripe mangoes – diced
- 1 cucumber – grated & sliced
- 1 tomato – diced
- 1 bunch -cilantro – chopped
- 1 lime + lime juice
- Chopped peanuts
- Sesame seeds – OPTIONAL
Spices and Oils used:
- 2 Tablespoons of vegetable cooking oil
- Cayenne chili powder
Step 1: In a large bowl, place every ingredient, season with lime juice, salt, oil, and chili. Mix everything together and serve. Garnish
with both the crushed peanuts and sesame seeds.
Yup! it’s as simple as that.
Serve it on a plate and enjoy.
