peanut butter cups

Not only is it a no bake dessert, its’ totally vegan, freezable friendly, gorgeous to look out, easy to make and super delicious for the whole family. Best believe the only thing missing is them wrapped up well and stacked up on the snack section of your nearest supermarket. I just gave y’all a brilliant idea, so go right ahead and act upon it. “Blows Kisses”.

Remember, the ingredients used isn’t cast on stone. If you don’t like one or two items on my list, just substitute them with something else that you enjoy eating.

Here’s what you’ll need for this particular recipe.

Prep time:  5 mins  Chill time: 30 mins  Total time: 35 mins

Serves: 3 pax

Yields: 6 cups

Main Ingredients:

  • 3/4 cup of soft peanut butter
  • 1 cup of desiccated shredded coconut
  • a pinch of salt
  • 1/2 cup of powdered sugar
  • 150 g Dark semi -sweet chocolate – melted
  • Cashew nuts – OPTIONAL for garnish

Tools used//required:

  • cupcake liners
  • cupcake baking tins
  • spatula
  • mixing bowl
  • spoon
  • Ice box {Also known as freezer}

Instructions:

Step 1: Prep the Peanut butter /coconut mix.

In a mixing bowl, mix together – PB + coconut + salt + icing / powdered sugar to form a thick paste consistency as shown on the video above.

Step 2: Prep the cupcake/ muffin baking tray.

Align the baking tray with the cupcake liners. Add a Tablespoon of smooth melted chocolate on each. Smear the sides of the liners with the scooped chocolate. Take your PB mix, make small balls then flatten them and add them into each of the liners. Cover each of them with the rest of the melted chocolate. Tap the tray with the liners at least three times on the counter top. This will make sure there isn’t any air pockets and the mixture is well leveled.

Step 3: Chill for 30 mins until they are hard

Step 4: Serve them with a sprinkle of salt and chopped nut and enjoy.

FYI: These no bake simple dessert can either be eaten on their own or used to decorate other desserts like birthday cakes, glazed donuts/ doughnuts, and cupcakes.
