I surprise myself on how obedient I have been up to now. Working on my healthy eating like its fun. It’s not. My doctor must be smiling now. Its’ almost a month since I had some fast food, and I have not “dialed a delivery”. Do y’all know how hard this has been? My fingers are just itching but I keep reminding myself of the goal and that is to try to stay away from deliciously greasy fast foods. I mean, I have to be realistic, two months as an achievable goal ain’t such a dramatic beginning.

The past week I have been enjoying lots of sauteed mushrooms, fried eggs/omelette, salads, white bread and minced chicken. Absolutely not in any particular order, different days with different favorites. This week I’m beginning a new journey of fried vegetables with a starch – rice, ugali {Who am I kidding}, I should have said – “maybe Ugali”, since last time I ate ugali must have been 5 or 6 months ago. Don’t look at me like that, its’ not my favorite staple. Let’s just stick to rice as the starch here, shall we?.

On this recipe, I call it ” the healthy bonus of vegetable fried rice”. Most of the vegetable rice dishes calls for an addition to fried scrambled eggs, I decided to opt it out, since last week that was part of the meal. They say, too much of something is poisonous, but feel free to add it to make it a signature meal.

Here is my version of this recipe:-

Prep time: 15 mins    Cook time: 15 mins   Total time: 30 mins

Serves: 3 pax

Yields: 3 servings

Main ingredients:

  • 1 -1/2 cups of cooked & cooled rice
  • 1 carrot – chopped in small cubed
  • 3 spring onions -chopped
  • 2 handfuls of shredded purple cabbage
  • 1/2 teaspoon of minced ginger
  • 1/2 teaspoon of minced garlic
  • 1 cup of chopped french beans
  • 1 cup of chopped baby corn
  • 1/2 cup of cooked peas
  • 1/4 cup water

Spices Used:

  • 1 teaspoon of salt
  • 2 Tablespoons of dark soy sauce
  • vegetable cooking oil
  • 1/2 teaspoon of cayenne chili powder
  • 1/2 teaspoon of pilau masala
  • 1/2 teaspoon of cardamom

Instructions:

Step 1: Lightly saute the veggies

Over medium high heat, in a sauce pan, add some oil and to it in goes the minced garlic and ginger. Once they start to be fragrant, add in the onions and cook until they are lightly soft. Add in the diced carrots, and cook them for a minute while covered. Next is the baby corn plus the spices. The french beans follow, mix everything to be well combined. Add in the boiled peas, cover and let it all cook for 1 min ot two while covered. Next is the purple cabbage and the cooked rice, combine everything. Add in the soy sauce and water, Cover to cook and warm up for 3 mins.

Step 2: Adjust the seasoning if need be.

Step 3: Serve  and enjoy while still hot.
