At one point in my young life, if you would have brought me a bowl of such like vegetable soup and told me to enjoy my soup, I would have disagreed with you. I believed that in order for a dish to be called a “soup”, there shouldn’t be any chew-able substances in it. Now that perspective of me has changed overtime. Right now am so opened to trying out new dishes, that never seemed to cross my mind.
Lately here in Nairobi, this weather has been so muggy and cold and I couldn’t think of any better way to warming myself up than with a hot bowl of a delicious healthy soup. Allow me to take you back to this old fashion soup recipe. Its’ quick and easy to prep and with just a few ingredients available to you, enjoying this will be your everyday move.
Making “Vegetable Soup”
Prep time: 5 mins Cook time: 18 mins Total time: 23 mins
Serves: 4 pax
- 2 cups of french beans – chopped
- 1 -1/2 cups of baby corn – chopped
- 1 tomato diced
- 1 red onion – diced
- 2 cloves of garlic minced
- 2 cups of button mushrooms – sliced
- 4 teaspoons of all-purpose flour
- 2 teaspoons of salt
- 1 table-spoon of vegetable cooking oil
- 2 cups of water
- 1/2 teaspoon of cayenne chili powder
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of ginger powder
Step 1: saute the onions + garlic + mushrooms for 8 mins. In a saucepan or sufuria, add oil and onions + garlic first, until slightly browned, season with salt. Add in the mushrooms and allow it to cook until all the water evaporates and is slightly browned.
Step 2: Add the rest of the veggies, add the water + flour + spices. Mix and cover to boil for 5 to 8 mins.
Step 3: Adjust the seasoning to taste if need be.
Step 4: serve while still hot.
