Normally, a stroganoff is a Russian dish that consists of sauteed pieces of beef served with a thick sauce. In this recipe, I’ve substituted the beef with mushrooms for it to be vegetarian dish.
When it comes to food preparation, as much as I love the final outcome of the food, at the back of my mind I know the dish washing process is just around the corner and I dread that moment. That is why I love such recipes where I get to use fewer dishes and cook in one pot. Yeah, I’m lazy like that and I got no shame in shouting at the tallest mountain about it either.
You won’t believe how much flavor this healthy one pot recipe packs with such little time and effort. I decided to serve this mushroom stroganoff with some spinach spaghetti. The combination of everything together blends well and compliments each other.
Here is what you’ll need:

Serves: 2 pax
Yields: 2 servings
- 2 cups of sliced button mushrooms
- 1 cup of mixed diced onions – green + white
- 1 Tablespoon of vegetable oil
- 1 teaspoon of softened margarine
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon turmeric
- 1/4 teaspoon cardamom
- 1/4 teaspoon nutmeg
- 1/2 cup of plain thick yogurt
For the sauce:
- 1 -1/4 cups of water / broth
- 3 Tablespoons of all purpose flour
- 1 Tablespoon of dark soya sauce

- A saucepan + lid

Step 1: Cooking the onion + garlic mix – place a sauce pan over the stove and heat it over medium heat. Drizzle oil and add in the mixed onions. Saute for about 5 mins until slightly golden brown. Add in the chopped garlic and cook for 3 mins until they are super fragrant.
Step 2: Cook the mushrooms – Add in the sliced mushrooms and mix everything together. Cover and let it brown for 5 to 8 mins.
Step 3: Add in the sauce mix – In a bowl or jug, add in water + the flour + soya sauce, mix everything together and make sure there aren’t any lumps. Add the liquid mixture into the cooking mushroom mix, toss everything around. Cover and let it simmer for 15 mins. The consistency to look out for is thick and darker in color.
Step 4: Add in the thick plain yogurt – This will thicken the sauce much more, and add more flavor. Mix everything together and well. Cover and let it cook for another 5 mins. Turn off heat and serve.
