I am a die hard fan of anything coconut flavored and white chocolate being my favorite chocolate, what better way to have desert? Coconut truffles with white chocolate flavor are smooth, delicious, melt in your mouth. They are easy to make, with simple and readily available ingredients.

There are many ways you can make coconut truffles, with condensed milk, whipping cream or with melted butter but I prefer the smooth texture and taste you get while using white chocolate.

This type of truffle among so many other varieties are suitable easy dessert prepared for occasion such as : bachelor parties, baby showers, birthdays , or gifts and such like events.

Making “White chocolate coconut truffles”.

prep time: 15 min   refrigeration: over night

Yields: 11 pieces.

MAIN INGREDIENTS

  • 240 g of white chocolate
  • 1/2 cup of whipping cream
  • 250 g of low fat -unsweetened desiccated coconut
  • 1 tsp of vanilla extract
  • extra desiccated coconut {coating}
  • dates -for garnish {OPTIONAL}

INSTRUCTIONS:

  1. In a skillet, bring to boil the whipping cream. Add it in the bowl of white chocolate + vanilla extract and mix them all together till you get a smooth consistency.

2. Once the chocolate melts, add in the coconut and mix using the folding method till fully combined. Cover it with a clear foil and place in the fridge for 1 hour to chill.

NB: since my melted chocolate consistency was slightly “runny” instead of firm {Which shouldn’t be the case- Almost thought it backfired} instead of chilling it for 1 to 3 hrs, I decided to refrigerate over night to help it set well.

Next morning- After an overnight refrigeration this is how firm it got.

3. Scoop it using a spoon, roll them into a golf size ball, coat them using the extra shredded coconut and serve.

Final outcome:

These little truffles are great cake toppers. They would also be perfect dipped in dark chocolate or any other garnish you have. Topped them up with dates, just to add a different flavor and color.
