Dessert not only comes at the end of a meal, but can as well start it all. The combination of pancakes and a cinnamon roll together is just the perfect comfort meal to start anyone’s day. I’ll be using a zero calorie Lakanto monkfruit sweetener to add a little sweetness to bloom your morning breakfast.
Here’s what you’ll need:

Main Ingredients:
*Pancake batter*
- 2 cups of all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup buttermilk ( 1/2 cup whole milk + 1 Tbl of white vinegar)
- 2 Tablespoons of Zero calorie Lakanto Monkfruit sweetener
- 1/4 teaspoon nutmeg
- 1 egg
- 3 Tablespoons of vegetable cooking oil
- 1/4 teaspoon salt
- Extra 1/4 cup of whole milk
*Cinnamon swirl mix*
- 2 Tablespoons of margarine
- 1 Tablespoon of ground cinnamon
- 3 teaspoons of Zero calorie Lakanto monkfruit sweetener.
*Glaze*
- 3 teaspoons of icing sugar
- 1 teaspoon of cinnamon
- pinch of salt
- water
*Important tools used*
- Flat chapati pan
- Heat on a stove
- Piping bag
- Heat proof spatula
- Serving plate
Instructions:
Step 1: Prep the pancake batter – In a large bowl, add all the dry ingredients of: flour + sweetener + salt + nutmeg. Whisk those together. Make a well at the center by pushing the flour mix to the side of the bowl. In goes the buttermilk + 1 egg + veggie oil. Mix that together, if you feel the batter is too thick, add a couple teaspoons of the extra milk until you get the perfect consistency which should be thick but with a flow of ribbons. Set that aside.
Step 2: Prep the cinnamon mix – In a small bowl, add the margarine + cinnamon + sweetener and cream those together until well combined. Add that mixture into a piping bag.
Step 3: Cooking the pancakes – Heat your pan on the stove over medium heat. Drizzle a little cooking oil on the pan, add the pancake batter and spread it out and leave it to cook. Once the bubble start to form, Make a ring form shape just as shown in the video, using the cinnamon mix. Give it 1 min then once the batter has dried out at the top, flip the pancake to cook the other side. Cook each side for at least 2 mins. Repeat the steps for the rest. The sugar will caramelize and create a sweet -crunchy texture to that side of the pancake.
Step 4: Prep the glaze mix – In a small bowl, add the icing sugar + cinnamon + salt and water. Mix those together until you get the consistency you are looking for. It should be slightly runny.
Step 5: Drizzle the glaze and Serve the pancakes while still warm and with a tall glass of warm milk.
